Beef Entrees
Barbeque Beef - Slow cooked and simmered til the meat melts in your mouth. Smothered in a rich tomato sauce and served on your favorite rolls. Top with brown mustard and Swiss cheese to make these sandwiches special.
Beef Stroganoff- Tender pieces of beef simmered in a sour cream/mushroom sauce with a touch of tomato and garlic. Egg noodles complete this delicious dish.

Elvis’s Beef Stew – Fit for a king, need I say more? A rich meaty stew in hearty broth with carrots, potatoes, and onions. Straight from the kitchen at Graceland.
Grecian Skillet Rib Eyes - Flavorful steaks seared in spices and topped with Kalamata olives and sprinkled with feta cheese at serving time.
Havana Moon Chili - This chili combines the usual ingredients with raisins, cinnamon, cloves, stuffed green olives and almonds, for a delicious carribean twist to an old standard.
Cattleman's Pot Roast – This roast is browned then simmered all day with onions and cloves. The wonderful gravy is delicious over mashed potatoes.
Jalapeno, Lime and Garlic Flank Steak - Customers ask for this delicious dish over and over. It can be served on warm tortillas and includes a side dish of black beans and tomatillo salsa. (Bring on the sour cream.)
Lasagna with Marinara Sauce – the freshest herbs and seasonings, plus artichoke hearts make this a unique and tasty lasagna. Includes lean ground beef.
Lasagna with Artichokes and Bechamel Sauce – Italian sausage, roasted red peppers, mushrooms, artichoke hearts and onions combined in a beautiful white sauce and layered with spinach noodles (if available).

Ole Taco Casserole - A family favorite; ground beef, sour cream and onions, tomatoes, and salsa verde. Served over Doritos. Que Bueno! Not your run of the mill Mexican dish.
Pepper Steak and Rice – Beautiful and delicious too! Lots of fresh tomatoes and green peppers. Serve with rice for a complete meal.
Ropa Vieja - meat is simmered in a rich and spicy tomato sauce until it is so tender it falls apart.
Salisbury Steak - True comfort food! Lean ground beef patties, well-seasoned, served with homemade gravy and mashed potatoes.
Savory Stuffed Bell Peppers - no rice or corn fillers here. These are wonderful; filled to overflowing with lean beef, roasted red peppers and mushrooms.
Sloppy Joes - A kid pleaser that adults love too. Add a slice of swiss cheese and some hot mustard for fun and flavor!
Spaghetti and Meat Sauce - everyone loves spaghetti. This red wine sauce boasts of ground beef, italian sausage, and is chock full of green peppers, onions, mushrooms and garlic.
Spaghetti Napoli – from Naples, Italy; a different twist on an old favorite, very light red sauce with capers, green peppers and onions.
Stuffed Green Peppers – filled with a blend of beef, rice, cheeses and tomato sauce. Freeze well and easily heated.
Texas Chili – lean ground beef, kidney beans, tomatoes and tomato sauce blended with green pepper, onions, a touch of garlic, cumin, and Texas chili powder.
Poultry Entrees
Brunswick Stew – A southern tradition with chicken, potatoes, corn and butter beans in a tomato base. That is a complete meal in itself. I’ll add cornbread or biscuits and can leave it in the crockpot if you want it for dinner that night.
Chicken Cacciatore – Simmered in tomato sauce and white wine and loaded with sliced mushrooms. A savory blend of herbs completes this dish.
Chicken Cordon Blue - Chicken breasts wrapped around slices of prosciutto and gruyere cheese, coated with a mixture of ground almonds, parmesan and spices and baked until golden brown.
Chicken Caesar Salad - I removed the anchovies and added broiled chicken to make this salad into a meal.
Chicken Curry Casserole - Chicken and broccoli smothered in a creamy curry sauce, topped with cheddar cheese and breadcrumbs.
Chicken Curry w/ Cashews - seasoned with ginger, cumin, cayenne and cilantro.
Chicken and Dressing Casserole - Chicken, herbs and dressing blended with sour cream sauce and baked til bubbly.
Chicken Enchiladas with Red Chili Sauce - Spicy and hot enchiladas are baked til flavors are blended. Top with diced avocado, sour cream, lettuce and lime wedges.
Chicken Kiev – pounded chicken breasts, rolled around a mixture of such savory herbs as chives, parsley, tarragon and rosemary. Then coated with breadcrumbs and lightly sautéed til browned.
Chicken Mexican – Makes the whole house smell yummy. Chicken, green pepper, onion, tomato mushrooms, garlic and spices simmer to a make a meal that is colorful and delicious. Serve over fluffy beds of rice.
Chicken Paprika – chicken with a delightful red pepper and onion sauce. (WW)
Chicken Parmasean – chicken cutlets sautéed till golden brown, then topped with mozzarella and parmesean cheese and broiled till cheese is bubbly. Served with homemade basil and garlic tomato sauce and over your favorite pasta.
Chicken Salad – with seedless green grapes and almonds. I will leave fresh for you to eat on cheffing day.
Chicken Tikka - Spiced up - but cooled down with a yogurt cilantro sauce.
Chinese Chicken Salad – This was my mother’s recipe. An oriental twist to an old standard. Don’t hesitate to try this one. It is a winner!
Coq au Vin - Chicken, bacon, pearl onions, potatoes nd mushrooms in a Burgundy wine sauce. Your kitchen smells wonderful!
Cornish Game Hens - hens are lightly glazed with a mixture of lemon juice, pepper, butter and soy sauce. Elegant and oh so good.
Dead Heat Kentucky Burgoo - Adapted from "Official Kentucky Derby Recipes". Come home to this down home stew with chicken, beef, and veggies simmering in the crockpot. Add homemade rolls for a scrumptious meal.
Emeril’s Chicken Pot Pie – adapted from Emeril. Vegetables and chunks of chicken in a creamy sauce and baked in piecrust til golden.
French Country Stew - Chicken thighs with onion, garlic, herbs, wine and dijon. Wonderfully satisfying.
Indonesian Ginger Chicken - one of Ina Garten's recipes from the Barefoot Contessa. You know it is gonna be good!
Kim's Chimichangas - Chicken simmered in vegetable broth, then shredded and mixed with sauteed chilis and salsa. Filled tortillas are covered with more salsa and topped with sour cream.
Nicole's Roasted Chicken - Chicken roasted with herbs til crispy. Reduced pan juices served on the side.
Poppy Seed Chicken – a mixture of chicken with a sour cream and mushroom sauce with a buttery but crunchy topping, sprinkled with poppy seeds. (My children love this.)
Raspberry Balsamic Glazed Chicken - sauteed chicken and glazed onions topped with a glaze that combines the best of balsamic and raspberry essences.
Saucy Chicken – A light but hearty Weight Watchers dish that leaves you full and satisfied. Chicken, tomatoes and green onions, simmered while the flavors blend together.
Sharon's Chicken Enchiladas - Client favorite! Creamy filled tortillas topped with fresh lettuce, tomatoes, sour cream and salsa.
White Chili – white beans, chicken, onions and green chilis combined with garlic, cumin and coriander. Add cornbread to make a delicious meal.
"Wild Chicken" - A creamy mixture of wild rice, mushrooms and chicken, with green peppers, pimientos. Topped with slivered almonds.

Cajun Chops - Seasoned and seared to a dark brown. Spicy and delicious.
Chili Rubbed Ham Steak w/ Zucchini Salsa - Ham is perfectly spicy and sweet and complemented by cool and mild salsa.
Crunchy Sausage Casserole – Sausage is cooked, drained and then combined with rice, celery, green peppers, onion and seasonings. Topped with sliced almonds. So different and so good!
Grilled Jamaican Pork Tenderloin Salad - Marinated tenderloin grilled or broiled, then sliced on a bed of greens and tropical fruit, drizzled with a dressing featuring lime juice and herbs.
Italian Spaghetti Casserole – Layers of Italian sausage and ground beef, cheeses, and pasta in mushroom red sauce. Freezes beautifully.
Ham, Corn and Potato Chowder – A thick and creamy chowder, chock full of pieces of ham and potato, combined with corn, mushroom bits and onions and simmered gently until seasonings blend.
Luby's Macaroni and Cheese - A real kid pleaser. I can add diced ham to make it complete.

Pork Chops w/ Sticky Rice and Thai Green Chili Sauce - fresh ginger and citrus juices add zing to this pleasing dish
Pork Cutlets Parmesan - Tender medallions of pork coated in a crust of parmesan cheese and bread crumbs.
Pork Medallions with Orange Sauce - orange and caper sauce makes this dish different and special enough for company.
Pork Scallopine With Honey Mustard – Chef Wendy’s recipe. Sliced pork steeped in spicy mustard and honey then breaded and sautéed until crisp and lightly browned. A touch of lemon tops this off.
Praline Ham - Baked with toasted pecans and a light maple syrup.
Spinach Quiche - Delicate quiche with bacon, mushrooms, cheese and spinach in a creamy egg mixture.
