Cranberry Casserole
3 c. raw apples (Grannie Smith—2-3 large)
2 c. raw cranberries
1 ˝ c. sugar
1 ˝ c. quick cooking oatmeal
˝ c. packed brown sugar
1/3 c. flour
˝ c. chopped pecans
2/3 c. butter or margarine
1. Peel and chop apples. Rinse and discard any imperfect cranberries. Mix chopped apples, cranberries, and sugar in a large mixing bowl. Pour into a greased 9 x 9 glass baking pan.
2. Combine the oatmeal, brown sugar, flour and pecans in a medium mixing bowl.
3. Melt butter and pour over the oatmeal mixture; mix well.
4. Top apple and cranberry mixture with oatmeal mixture. Do not stir.
5. Bake in a 350˚ oven for approximately 50 minutes or til bubbling and slightly brown.
